If your New Year’s resolution involved eating healthier and you haven’t yet broken that resolution, or if you just tend to eat healthy in general, this recipe is for you.
It’s great to take to a party too as it makes a lot and people love it. You can serve it with homemade tortilla or pita chips.
1 10-ounce bag of frozen corn, thawed
1 can black beans
1 poblano pepper, diced
1 small red pepper, diced
1 small onion, chopped
2 medium-sized vine-ripened tomatoes, chopped
1 ripe avocado, chopped
1 tablespoon olive oil
Juice from one large lime
3 large sprigs of cilantro, finely chopped
Salt to taste
Seasonings to taste: ground cumin and chili powder
Add the corn and black beans to a medium-sized bowl. Add in the chopped peppers, onions and tomatoes. Stir well.
Add in the avocado. Squeeze the juice from one lime into the bowl, and then drizzle with the olive oil. Add in the cilantro and seasonings to taste. Stir well.
You can serve this immediately or leave it in the fridge overnight. This will allow the flavors to meld nicely.
Makes 4 to 5 servings.
